In the Spring 2016 "island scene" magazine (for HMSA members) an inviting cover photo caught my eye and got me wondering about using our micro shoots to further enhance an already great recipe. Here is the cover of the magazine and below are photos of our dish. The recipe for this amazing looking dish included several items that we substituted for. Highlights are as follows.
We substituted rice vinegar for mirin in the sauce. We also used chili garlic sauce instead of Sriracha to give it more flavor and kick (you can see the flecks of chili pepper in the photos. We used our snap greens to garnish our dish, but actually used it also to add some incredible taste and texture to it, as the visual appeal of the snap greens go without saying, and the fresh crispy pea flavor is something to experience.

As a followup to our cream cheese with chives snap greens on a cracker we were thinking of a more hearty meal type application of the Calvin's Petite Snap Greens. One of our favorite soups is Japanese miso soup. This seemed like a natural as we prepare miso soup with tofu and seaweed with free range local egg added to make quite a nice meal in a hurry.
Knowing the taste profile of the snap greens (crunchy snap pea taste) coupled with the really cool look, we simply added our fresh greens as garnish on the soup. The results are pictured here and the taste is even better than the pictures could ever portray. Think of it as a savory soup with peas added, another winner edible using snap greens!
As a followup to our last entry and the introduction of our new Petite Snap Greens from Calvin"s Peas, we prepared some quick snacks that showcased the possibilities of utilizing our wonderful new shoots. Crackers with some cream cheese with chives and the new Petite Snap Greens, visually stunning with a taste to match.
As described on their website, "Selective breeding has inspired a delicate plant that is entirely edible and completely delectable. These leaves, shoots and stems are a lighter hue with fuller leaves and no spindly tendrils... Perfect for sweet and nutty garnishes, in salads or anywhere a pretty edible green with a snappy pea flavor can perk up the plate."
We were particularly attracted to the old fashioned and loving attention to the breeding craft. As Dr Calvin Lanborn explains his creation of the modern snap pea, "By chance, I observed an off type pea "rogue" which had thicker pod wall flesh than normal. My first thought was that this thicker pod flesh would improve the quality of the snow pea pods. As I worked with it, all crosses with this "rogue" pea gave only round, plump pods--no wide, flat snow pea pods were ever found. And thus we had a new pea to enjoy – the sugar snap pea. And my fascination with the possibilities from the snap pea has continued ever since... I've been helped by many others along the way in the search for and the incorporation of other genetic traits into Sugar Snap Peas and more recently Snap Greens."

It is always fun to align with and promote work done by good people. Dr. Calvin Lamborn is the man responsible for our new snap green microgreens and here is his story.
His snap greens have created some of the most stunning micro shoots we have ever seen and we can hardly wait to get them in the hands of some of our chef clients to see what they can create. We will be publishing more pics and dishes soon.
Above photos were taken from our first trial of snap greens grown in our standard MicroFarm. The photos are at 18 days of growth, we feel the optimum to about 21 days and our initial delivery samples will be made this week. The snap greens are spectacular and the tastes are incredible, EDIBLE Art!
